IMO, no one has taken ownership of I Fought The Law like The Dead Kennedys.

Spineshank did an awesome cover of While My Guitar Gently Weeps.

Metallica's version of Whiskey in the Jar is less a rendition of the traditional song, and more a cover of the Thin Lizzy version, all of the music cues are taken directly from that version.

Speaking of Metallica, they've pretty much taken ownership of Last Caress, to the point that when The Misfits (or bands with ex-Misfits members) play it live now, it more resembles the Metallica version than the original (except for the vocals at the end).

I heard Slayer's cover of Dissident Agressor years before hearing the original by Judas Priest. Talk about let down, give me the cover any day.

The Wire used a different version of Tom Waits' Way Down in the Hole as the opening theme for each season. First season was a cover by The Blind Boys of Alabama, which I actually like better than Waits' original (which was used for second season).

And of course, there's all the different versions of Little Boxes that were used as the opening themes for seasons 2 and 3 of Weeds.
